4-6 servings
- 1 Bunch of Curly Kale
- 1 large apple, julienned
- 1 Carrot, peeled and shredded
- 1/2 cup raisins (I used a mix of golden & california)
- 1/4 cup almonds chopped
Dressing:;
- 1/2 cup olive oil
- 1 lemon juiced
- 1 tsp kosher salt
- 1 Tbsp dijon mustard
- 1 tsp agave nectar
Topping: 2 tbsp hemp seed
Tear leave of kale from stems and slice into thin pieces. Place in large bowl with apple, carrot, raisins, and almonds. In a small bowl whisk together all dressing ingredients. Pour over kale slaw and mix well. Chill for 30 minutes before serving. Top with hemp seeds before serving.
