Autumn Kale Slaw

4-6 servings

  • 1 Bunch of Curly Kale
  • 1 large apple, julienned
  • 1 Carrot, peeled and shredded
  • 1/2 cup raisins (I used a mix of golden & california)
  • 1/4 cup almonds chopped

Dressing:;

  • 1/2 cup olive oil
  • 1 lemon juiced
  • 1 tsp kosher salt
  • 1 Tbsp dijon mustard
  • 1 tsp agave nectar

Topping: 2 tbsp hemp seed

Tear leave of kale from stems and slice into thin pieces. Place in large bowl with apple, carrot, raisins, and almonds. In a small bowl whisk together all dressing ingredients. Pour over kale slaw and mix well. Chill for 30 minutes before serving. Top with hemp seeds before serving.
