Zucchini Parm Grinders

Awesome healthy alternative to chicken and nice change from breaded eggplant.  So simple!

  • Ingredients:
  • makes 4 grinders
  • 4 grinder rolls
  • 4 zucchini sliced thinly lengthwise
  • 1 jar of your favorite marinara sauce
  • 4 tablespoons Shredded Daiya “mozzarella”

Brazil Nut parmesan (This is a  Café Gratitude recipe!):

  • 1 cup raw Brazil nuts
  • 1 tsp chopped garlic
  •  1/3 tsp salt
  • Process All Ingredients until you have a fluffy consistency

heat oven to a low broil. lightly brush zuch slices with olive oil and broil for 5 minutes. while they broil heat sauce on stove top until warmed. remove zuch slices from oven. place grinder rolls into oven to toast until they are golden brown. layer zuch, sauce, daiya, brazil nut parm on bottom half of grinder roll. repeat so that you have two layers. finish with grinder roll top and serve.
