Perfect Kale Pesto

This is almost to good to be true…really. I was craving kale (almost always) and with pasta (often) and so my version of Kale Pesto was born. Rave reviews from some pretty picky critics!

Ingredients:

  • 8 cloves garlic
  • 1 big bunch of kale
  • 1 1/2 cup olive oil
  • 2 cups brazil nut parmesean “cheese” (see recipe here)
  • 2 Tbsp fresh lemon juice
  • Kosher salt and black pepper to season
  • Pasta to serve with

In boiling pot of water blanch garlic cloves for 3-5 minutes. Remove from pot with a slotted spoon and place into food processor. In same water, blanch kale for 45 seconds. Drain and add to garlic in food processor bowl.  Puree on high while gradually adding olive oil, parm, lemon juice, and salt and pepper.  Mix with hot cooked pasta and enjoy!
