Simple. Delicious. Packed with protein and flavor!
- One, 15 ounce can of chickpeas, drained and rinsed
- 1/2 small red onion, peeled and diced small
- Two limes, juiced (use zest of 1 if you’d like)
- 1 jalapeño pepper, minced (remove seeds)
- 1/4 cup, chopped cilantro
- 1/2 avocado, pitted and chopped small
Combine all ingredients. Serve as a side dish or throw on top of your favorite greens and have a terrific salad.
