Kale is pretty trendy these days and with good reason. It nutritionally stands out among vegetables and when prepared correctly is really tasty. However, we have found putting it on a sandwich raw can be a let down on the flavor side. Grab your food processor and a few other healthy ingredients to create this creamy, delicious spread. Perfect for a veggie sandwich, crackers, wrap or as a veggie dip.
yeilds: 2 sandwiches
- 1 cup dinosaur kale torn into small pieces
- 1/2 cup macadamia nuts
- 2 scallions thinly sliced
- 1 tbsp hemp seeds
- 1 tbsp minced garlic
- 2 tbsp tahini
- 1/2 lemon juiced
- salt to taste
Sandwich: (these veggies were an awesome combination but this is your sandwich you’re building…feel free to substitute)
- 4 slices of your favorite hearty healthy bread (ezekiel bread, whole wheat, mulit-grain)
- 1 tbsp earth balance
- 1/2 small zucchini thinly sliced
- 1/2 tomato thinly sliced
- 1/2 green pepper thinly sliced
- Salt and Pepper to taste
Get started:
Put oven on a low broil. In food processor add kale. Process until shredded into small pieces. Add in all other ingredients except salt. Process until desired consistency. Mine was not completely smooth but was free of any big pieces of nuts or kale. Set aside.
On one side of each slice of bread spread 1/2 T of earth Balance. On the other sides spread generously with Creamy Kale Spread. Begin assembly by layering vegetables on one side. Top with remaining bread slice and put in oven to toast. Watch oven closely until sandwich is golden brown and ready to eat.







Very creative! From the picture, I thought it was going to be an avocado spread, which would be the veggie I would add to the mix. My favorite sandwich is ridiculously simple–toasted Ezekiel bread with a whole avocado smashed up, topped with either sprouts/spinach and nutritional yeast or an herb. I might have to venture into this kale spread though…

I used hulled hemp seeds and didn’t need to soak them first. You could probably use ground flax seed as a substitute but I have not tried it. I can only attest to the awesome nutty flavor the hemp adds to the spread. If you try it please let me know how it goes. Enjoy!
