Sweet Caramelized Portobellos and Onions

This recipe has a delicious sweet taste to it that makes it very unique.

  • 2 cups of brown rice (cooked per instructions)
  • 1 tblsp coconut oil
  • 2 tbslp of maple syrup (coconut nectar works great too)
  • 2 portabella mushrooms
  • ½ sweet onion (chopped)

Chop portabellas into chunks and onions into thin strings. Place in a bowl and top with maple syrup (or other sweetener)

Cook brown rice according to instructions.

Heat 1 tablespoon of coconut oil in skillet. Throw in marinated portabellas and onions and cook until onions are caramelized. Put on top of, or toss with, brown rice. Serve and enjoy.
