
This sandwich is sweet, delicious, and ridiculously simple. I got the idea from the Sugar Plum Vegan Café in Sacramento.
- 4 Slices of Ezekiel bread
- 1 Sweet Potato
- 1 Avocado
- 2 tbls Veganaise
- Salt and pepper
Pierce sweet potato and cook in the microwave for 6-8 minutes, just enough to make it soft, but not too mushy.
Pull skin off potato and cut into long slices.
Slice avocado
Spread veganaise on bread and top with sliced sweet potato and avocado. Top avocado with a few dashes of salt and pepper.
Place sandwich in oiled pan and “grill” until bread is toasted.
Makes 2 sandwiches.
You can also make this as a wrap. Follow the same directions. Add some sprouts for added nutrition.
