Adzuki Burger

A delicious burger that breaks away from the normal chickpeas and black beans we find so easily (including on this site).

  • 3 tbsp of water
  • 1 tbsp of chia seeds
  • 1 tbsp of tamari
  • 1 tsp minced garlic
  • ½ tsp Dijon mustard
  • ½ tsp rosemary
  • ¼ tsp ground pepper
  • 2 tbsp olive oil
  • 1-2 cups of baby protabello mushrooms
  • 1 cup sliced yellow onion
  • 2 slices of sprouted Ezekiel bread
  • 1 15oz can of organic Adzuki beans

Heat oven to 400 degrees

Combine water and chia seeds in a small bowl and set aside to thicken.

Place two pieces of Ezekiel bread into your food processor and process until chopped into bread crumbs. Leave in processor.

In a sauté pan, add olive oil, mushrooms, and onions. Sauté until onions are caramelized.

Add adzuki bean, chia seeds, mushroom and onion mixture, and all remaining ingredients to food processor (on top of bread crumbs).

Start pulsing until ingredients are blended and clumped together. Be careful not to over-process or mixture will become smooth and extremely difficult to form.

Form mixture into patties of desired size (we made 3 very healthy size burgers out of these. Could easily have been stretched to 4). Place on baking sheet and bake at 400 degrees for 10-15 minutes.

Place on buns with all your favorite toppings (I had lettuce, grilled onions, and avocado).
