This one took me a few times to get it just right. I discovered two things in making hummus. First, Great Northern beans are a must have ingredient for this perfect hummus . They provide a grainy, nuttiness that neither navy beans nor cannellini beans have. Most of the time I find these types of beans interchangeable but not for the perfect hummus. Second, skip the tahini. I love tahini and I use quite a bit in my kitchen but with this recipe it overpowered the perfect blend of beans and garlic. Make this dip and you may never go back to store bought hummus again.
Ingredients:
- 2 15.8 ounce cans Great Northern Beans, rinsed and drained
- 1/2 cup olive oil
- 3-4 garlic cloves, peeled and sliced
- 1/4 cup fresh lemon juice
- 1 1/2 tsp ground cumin
- 1 1/2 tbsp chopped parsley
- 1/2 tablespoon salt
- 1 tsp pepper
- pinch cayenne pepper
Directions:
Place Great Northern Beans in food processor and add garlic, lemon juice, cumin and parsley. Process until texture is smooth and creamy. Carefully pour in oil while machine is running. Season with salt, pepper and cayenne. Refrigerate and serve cold with toasted baguette, pita bread, bagel chips or tortilla chips.
