This easy dish would be amazing served over greens, in a wrap or just as is. It is so delicious!
- 1/2 cup uncooked quinoa
- 1 tbsp safflower oil
- 1 block firm or extra firm tofu (pressed and cut into cubes)
- 1 cup favorite wing sauce
- 1 cup chopped celery
- 1 cup chopped red pepper
Cook quinoa according to package directions, set aside.
In a pan on medium-low heat add oil and cubed, pressed tofu. Cook until browned on both sides. Cool and drain on a paper towel lined plate. Pat dry. In a small bowl add tofu and wing sauce. Coat evenly. In a large serving bowl layer quinoa, celery, peppers and top with buffalo tofu. Season with salt and pepper. Enjoy!
