Walnut and Coconut Shortbreads

This a slightly modified recipe from the book Raw Energy. I changed the amount of vanilla from 1 teaspoon to 1/2 teaspoon to accent the coconut and walnut combination.

  • 2 Cups of raw walnuts
  • 1 cup unsweetened coconut
  • ¼ cup agave
  • ½ teaspoon of vanilla extract

Blend all ingredients in your food processor for about 60 seconds. It will be pretty oily when handled.

Roll pieces in to small balls and flatten into cookies. Cookies can be eaten right away but are better after being refrigerated for awhile.
